Cutting with the grain, slice the Picanha into several individual steaks, each 1 inch to 1½ inch thick. Cutting with the grain may seem counter-intuitive, but after your steaks are cooked, you will slice each steak against the grain, cutting the long muscle fibers into tiny segments and ensuring each bite is tender.

What cut of meat is Picanhas’? Picanha is a cut of beef taken from the top of the rump. You might also know it as a rump cover, rump cap, sirloin cap, or even culotte steak. It is triangular in shape and surrounded by a thick layer of fat called a fat cap.

Picanha and ribeye steaks are famous and fatty, making them a bit more expensive than other cuts of beef.

Picanha is not often carried on supermarket shelves, but it is usually available by request at a butcher or good meat counter. It’s relatively inexpensive, especially when compared to ribeyes and other notable steaks, and is packed with beef flavor. This makes it one of the best cuts of meat for grilling.
